Eat LBC: Two Girls, One Idea

When Elizabeth Borsting and Terri Henry founded Eat LBC, they did so for selfish reasons. It seemed like every other city, town or community had their own restaurant week except Long Beach. Neither wanted to have to leave the LBC to enjoy new dining experiences; after all, they both knew that Long Beach had some great restaurants and talented chefs of its own. So what are two hungry girls to do? Create Eat LBC and organize a bona fide Restaurant Week of their own.
